Cilantro Lime Rice and Veggie Bowls

For the Cilantro Lime Rice:

1 cup long-grain white rice

2 cups vegetable broth (or water)

Zest of 1 lime

Juice of 1 lime

1 tablespoon olive oil

1/2 teaspoon salt

Fresh cilantro, chopped (about 1/4 cup)

For the Veggie Bowl:

1 can (15 oz) black beans, drained and rinsed

1 cup corn (fresh, frozen, or canned)

1 red bell pepper, diced

1 cup cherry tomatoes, halved

1 avocado, diced

1/2 teaspoon cumin

1/2 teaspoon smoked paprika

Salt and pepper to taste

Optional toppings: lime wedges, sliced jalapeños, feta cheese, or sour cream

Instructions
 

Cook the Rice:

    - In a medium saucepan, combine the rice, vegetable broth, zest of lime, olive oil, and salt. Bring to a boil over medium-high heat.

      - Once boiling, reduce heat to low, cover, and simmer for about 18-20 minutes, or until the rice is tender and the liquid is absorbed.

        - Remove from heat, let sit covered for 5 minutes, then fluff with a fork. Stir in the lime juice and chopped cilantro.

          Prepare the Veggies:

            - In a large skillet over medium heat, add a splash of olive oil. Once hot, add the diced red bell pepper and sauté for about 3-4 minutes until softened.

              - Add the corn and black beans to the skillet, along with cumin and smoked paprika. Cook for an additional 5-7 minutes, stirring occasionally until heated through. Season with salt and pepper to taste.

                Assemble the Bowl:

                  - In serving bowls, add a generous scoop of cilantro lime rice as the base.

                    - Top with the sautéed veggie mixture, followed by halved cherry tomatoes and diced avocado.
