Cinnamon Cream Cheese Muffins

1 ½ cups all-purpose flour

½ cup granulated sugar

½ cup brown sugar, packed

2 teaspoons baking powder

½ teaspoon baking soda

½ teaspoon salt

1 teaspoon ground cinnamon

½ cup unsalted butter, melted and slightly cooled

1 large egg

1 teaspoon vanilla extract

½ cup milk

4 oz cream cheese, softened

2 tablespoons powdered sugar

1 teaspoon vanilla extract (for filling)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease with cooking spray.

    Prepare the Cream Cheese Filling: In a bowl, mix the softened cream cheese, powdered sugar, and 1 teaspoon of vanilla extract until smooth and creamy. Set aside.

      Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, baking soda, salt, and ground cinnamon until well combined.

        Mix Wet Ingredients: In another bowl, whisk together the melted butter, egg, 1 teaspoon of vanilla extract, and milk until smooth.

          Combine Ingredients: Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix; it's okay if there are a few lumps.

            Fill Muffin Tin: Spoon about 2 tablespoons of muffin batter into the bottom of each muffin cup. Then, add about 1 tablespoon of the cream cheese filling on top of the batter. Finally, top with another 2 tablespoons of muffin batter, covering the cream cheese filling.

              Sprinkle Cinnamon Sugar (Optional): If desired, mix a little cinnamon and sugar together and sprinkle on top of each muffin before baking.

                Bake: Bake the muffins in the preheated oven for 18-20 minutes or until a toothpick inserted in the center of a muffin comes out clean.

                  Cool and Serve: Allow the muffins to cool in the tin for about 5 minutes before transferring them to a wire rack to cool completely. Enjoy warm or at room temperature!
