2 cans of refrigerated cinnamon rolls (with icing)

4 large eggs

1 cup milk (or non-dairy alternative)

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

½ cup brown sugar

½ cup chopped pecans or walnuts (optional)

1 teaspoon powdered sugar (for garnish)

Fresh fruit (for serving, optional)

Instructions
 

Preheat Oven: Preheat your oven to 375°F (190°C) and grease a 9x13-inch baking dish with non-stick spray or butter.

    Prepare Cinnamon Rolls: Open the cinnamon rolls and separate them. Cut each roll into quarters or sixths, placing them in the prepared baking dish as you go. Don’t worry about making it perfect; just ensure they are spread evenly.

      Make the Egg Mixture: In a large bowl, whisk together the eggs, milk, vanilla extract, ground cinnamon, and brown sugar until well combined.

        Combine Ingredients: Pour the egg mixture evenly over the chopped cinnamon rolls in the baking dish. Gently press down on the rolls with a spatula to ensure they soak up the mixture. If using, sprinkle the chopped pecans or walnuts on top for added texture.

          Bake: Place the casserole in the preheated oven and bake for 25-30 minutes, or until the edges are golden brown and the center is set. You can check by inserting a toothpick into the center – it should come out clean.

            Cool & Drizzle: Once baked, remove the casserole from the oven and let it sit for about 5-10 minutes. While it cools, warm the icing that came with the cinnamon rolls in the microwave for about 10-15 seconds. Drizzle the icing generously over the warm casserole.
