Cinnamon Sugar Banana Donuts

2 ripe bananas, mashed

1/2 cup granulated sugar

1/4 cup brown sugar

1/2 cup buttermilk (or milk with 1 tsp of vinegar)

1/4 cup melted butter (cooled)

1 large egg

1 1/2 cups all-purpose flour

1 tsp baking soda

1/2 tsp baking powder

1/2 tsp salt

1 tsp vanilla extract

2 tsp ground cinnamon (for topping)

1/2 cup granulated sugar (for topping)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and grease a donut pan with non-stick spray or butter.

    Prepare the Wet Ingredients: In a large bowl, combine the mashed bananas, granulated sugar, brown sugar, buttermilk, melted butter, egg, and vanilla extract. Whisk until smooth and well combined.

      Mix Dry Ingredients: In a separate bowl, sift together the flour, baking soda, baking powder, salt, and the remaining ground cinnamon.

        Combine Ingredients: Gradually add the dry mixture to the wet banana mixture. Stir gently until just combined – be careful not to overmix; small lumps are fine.

          Fill the Donut Pan: Using a piping bag or a spoon, fill each cavity of the donut pan about 2/3 full with the batter.

            Bake the Donuts: Place the pan in the preheated oven and bake for 10-12 minutes, or until the donuts are golden brown and a toothpick inserted into the center comes out clean.

              Prepare Cinnamon Sugar: While the donuts are baking, mix the remaining granulated sugar with the ground cinnamon in a medium bowl.

                Coat the Donuts: Once baked, allow the donuts to cool in the pan for about 5 minutes before removing them. While still warm, toss each donut in the cinnamon sugar mixture until well-coated.
