Ingredients
  

12 oz (340g) pasta (farfalle or penne works well)

4 cups cherry tomatoes, halved

1/4 cup extra virgin olive oil

3 cloves garlic, minced

1/4 cup red wine vinegar

1 tsp sea salt

1/2 tsp freshly cracked black pepper

1/2 tsp red pepper flakes (optional)

1/2 cup fresh basil leaves, torn

1/2 cup fresh mozzarella balls (bocconcini), halved

Zest of 1 lemon

Juice of 1 lemon

Freshly grated Parmesan cheese for serving

Instructions
 

Cook the Pasta:

    - Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside.

      Prepare the Marinade:

        - In a large mixing bowl, combine the halved cherry tomatoes, olive oil, minced garlic, red wine vinegar, sea salt, black pepper, and red pepper flakes (if using). Toss well to ensure that the tomatoes are well-coated in the marinade.

          Mix the Pasta:

            - Once the pasta has cooled, add it to the bowl with the marinated tomatoes. Gently toss to combine all the ingredients.

              Add Fresh Ingredients:

                - Stir in the torn fresh basil leaves, halved mozzarella balls, lemon zest, and lemon juice. Toss everything together until evenly mixed.

                  Let it Chill:

                    - Cover the bowl with plastic wrap or transfer the pasta to an airtight container. Let it marinate in the refrigerator for at least 30 minutes to allow the flavors to meld. For the best flavor, consider marinating for 1-2 hours.

                      Serve:

                        - When ready to serve, taste for seasoning and adjust if necessary. Serve chilled or at room temperature, garnished with freshly grated Parmesan cheese.
