8 ounces spaghetti

1 cup cherry tomatoes, halved

1 cucumber, diced

1 bell pepper (red or yellow), diced

1/2 cup black olives, sliced

1/2 cup feta cheese, crumbled

1/4 cup red onion, finely chopped

1/4 cup fresh basil, chopped

1/4 cup olive oil

2 tablespoons red wine vinegar

1 teaspoon dried oregano

Salt and pepper to taste

1 cup baby arugula or mixed greens for serving

10 small cups or bowls for serving

Instructions
 

Cook the Spaghetti: Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Drain and rinse under cold water to cool the pasta completely. Set aside.

    Prepare the Vegetables: In a large mixing bowl, combine the cherry tomatoes, cucumber, bell pepper, black olives, red onion, and fresh basil.

      Combine Dressing Ingredients: In a small bowl, whisk together the olive oil, red wine vinegar, dried oregano, salt, and pepper until well combined.

        Mix Everything Together: Add the cooled spaghetti to the bowl of vegetables. Pour the dressing over the pasta and vegetables, tossing gently until everything is well coated and evenly mixed.
