1 can black beans, rinsed and drained

1 can corn, rinsed and drained

1 red bell pepper, diced

1 yellow bell pepper, diced

1 cup cherry tomatoes, halved

1 ripe avocado, diced

1/4 cup red onion, finely chopped

1/4 cup fresh cilantro, chopped

1 jalapeño, finely diced (seeds removed for less heat)

1 lime, juiced

2 tablespoons olive oil

1 teaspoon cumin

1 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon garlic powder

Tortilla chips, for serving

Instructions
 

In a large mixing bowl, combine the black beans, corn, diced red and yellow bell peppers, halved cherry tomatoes, diced avocado, chopped red onion, cilantro, and jalapeño.

    In a small bowl, whisk together the lime juice, olive oil, cumin, salt, black pepper, and garlic powder until well combined.

      Pour the dressing over the bean and vegetable mixture. Gently toss everything together until evenly coated, being careful not to mash the avocado.

        Taste and adjust seasoning if necessary. You can add more lime juice or salt according to your preference.

          Cover the bowl with plastic wrap and let the Cowboy Caviar chill in the refrigerator for at least 30 minutes to allow the flavors to meld together.

            Serve the Cowboy Caviar with tortilla chips as a dip or use it as a topping for tacos, grilled chicken, or salad.
