Creamy Avocado Pasta

12 oz spaghetti or your pasta of choice

2 ripe avocados, pitted and scooped

2 cloves garlic, minced

1/4 cup Greek yogurt (or sour cream for a richer taste)

2 tbsp fresh lemon juice

1/4 cup olive oil

Salt and pepper, to taste

1/4 tsp red pepper flakes (optional)

1/2 cup grated Parmesan cheese (optional)

Fresh basil leaves, for garnish

Cherry tomatoes, halved (for topping)

Instructions
 

Cook the Pasta: Begin by boiling water in a large pot. Once it’s at a rolling boil, add a generous pinch of salt and then the pasta. Cook according to package instructions until al dente. Reserve 1 cup of pasta water before draining.

    Prepare the Avocado Sauce: In a food processor, combine the ripe avocados, minced garlic, Greek yogurt, lemon juice, and olive oil. Blend until smooth. If the sauce is too thick, gradually add some of the reserved pasta water until you reach your desired consistency.

      Season the Sauce: Taste the avocado sauce and season with salt, pepper, and red pepper flakes (if using). Blend again briefly to combine all ingredients.

        Combine Pasta and Sauce: In the pot you used for the pasta, add the drained pasta back in. Pour the avocado sauce over the hot pasta and toss well until the pasta is evenly coated. If the sauce is too thick, add a bit more of the reserved pasta water.

          Serve: Divide the creamy pasta among plates. If you’re using Parmesan cheese, sprinkle it generously over each serving. Top with fresh basil leaves and halved cherry tomatoes for a pop of color and flavor.
