4 bone-in pork chops (about 1-inch thick)

Salt and black pepper, to taste

4 strips of thick-cut bacon, chopped

1 tablespoon olive oil

2 cloves garlic, minced

1 medium onion, thinly sliced

1 cup chicken broth

1 cup heavy cream

1 teaspoon Dijon mustard

1 teaspoon dried thyme

1 tablespoon fresh parsley, chopped (for garnish)

Season the Pork Chops: Pat the pork chops dry with paper towels and season both sides generously with salt and black pepper.

    Cook the Bacon: In a large skillet over medium heat, add the chopped bacon. Cook until crispy, about 5-7 minutes. Remove the bacon from the skillet and place it on a paper towel-lined plate to drain. Keep 1 tablespoon of the bacon fat in the skillet for cooking the pork chops.

      Sear the Pork Chops: Increase the heat to medium-high. In the same skillet, add the olive oil to the bacon fat. Once hot, carefully add the pork chops. Sear for about 4-5 minutes per side, until they are golden brown and reach an internal temperature of 145°F (63°C). Remove the chops from the skillet and set aside.

        Sauté the Onions and Garlic: In the same skillet, add the sliced onions. Cook until they are soft and translucent, about 3-4 minutes. Then, add the minced garlic and sauté for another minute until fragrant.

          Create the Creamy Sauce: Pour the chicken broth into the skillet, scraping up any brown bits from the bottom. Bring it to a simmer, then reduce the heat to low. Stir in the heavy cream, Dijon mustard, and dried thyme. Let the sauce simmer for about 3-4 minutes until it thickens slightly.

            Combine Everything: Return the pork chops to the skillet along with the cooked bacon. Spoon some of the sauce over the chops and let everything simmer for an additional 5 minutes, allowing the flavors to meld.
