1 lb (450g) potato gnocchi

1 pint cherry tomatoes

3 tablespoons olive oil

Salt and black pepper, to taste

1 cup heavy cream

1 cup fresh basil, chopped

1 cup grated Parmesan cheese

2 cloves garlic, minced

1 teaspoon red pepper flakes (optional)

Fresh basil leaves, for garnish

Roast the Tomatoes: Preheat your oven to 400°F (200°C). On a baking sheet, toss the cherry tomatoes with 2 tablespoons of olive oil, salt, and black pepper. Arrange them in a single layer and roast for about 15-20 minutes, or until they are blistered and slightly caramelized.

    Cook the Gnocchi: While the tomatoes are roasting, bring a large pot of salted water to a boil. Add the gnocchi to the boiling water and cook according to package instructions until they float to the surface, usually about 2-3 minutes. Drain and set aside.

      Prepare the Cream Sauce: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the minced garlic and red pepper flakes (if using) and sauté for about 30 seconds until fragrant. Reduce the heat to low, then stir in the heavy cream and let it simmer for a couple of minutes.

        Combine Ingredients: Add the cooked gnocchi to the cream sauce, and stir gently to coat the dumplings. Mix in the grated Parmesan cheese and chopped basil, and cook for an additional 2-3 minutes until the cheese is melted and everything is well combined. Season with salt and pepper to taste.
