Ingredients

1 cup orzo pasta

2 cups fresh broccoli florets

1 tablespoon olive oil

1 medium onion, finely chopped

2 cloves garlic, minced

3 cups vegetable broth

1 cup whole milk

1 ½ cups sharp cheddar cheese, shredded

½ teaspoon salt (adjust to taste)

¼ teaspoon black pepper

¼ teaspoon smoked paprika

¼ teaspoon red pepper flakes (optional, for heat)

2 tablespoons cream cheese

Fresh parsley, chopped (for garnish)

Instructions

Cook the Orzo: In a large pot of boiling salted water, cook the orzo according to package instructions until al dente, about 8-10 minutes. In the last 3 minutes of cooking, add the fresh broccoli florets. Drain the orzo and broccoli, then set aside.

Sauté the Aromatics: In the same pot, heat the olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes, or until softened. Stir in the minced garlic and cook for an additional 1 minute until fragrant.

Make the Creamy Base: Pour in the vegetable broth and bring to a simmer. Reduce the heat to low, then stir in the whole milk. Gradually add the shredded cheddar cheese and cream cheese, mixing until they are fully melted and incorporated, creating a creamy sauce.

Combine Everything: Add the cooked orzo and broccoli back to the pot. Season with salt, pepper, smoked paprika, and red pepper flakes (if using). Stir well to combine all ingredients and cook on low heat for 2-3 minutes until everything is heated through.

Serve: Taste and adjust seasoning if needed. Remove from heat and let it sit for a minute before serving. Garnish with fresh parsley for a pop of color and flavor.
