Creamy Cajun Pasta with Turkey

12 oz fettuccine pasta

1 lb ground turkey

2 tablespoons Cajun seasoning

1 tablespoon olive oil

1 medium onion, diced

3 cloves garlic, minced

1 red bell pepper, diced

1 cup heavy cream

1 cup chicken broth

1 cup fresh spinach

1 cup grated Parmesan cheese

Salt and black pepper, to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the fettuccine and cook according to package instructions until al dente. Drain and set aside, reserving a cup of pasta water.

    Cook the Turkey: In a large skillet, heat olive oil over medium heat. Add the ground turkey and season with Cajun seasoning, salt, and black pepper. Cook until browned and fully cooked, breaking it apart with a spatula (about 5-7 minutes). Remove from the skillet and set aside.

      Sauté Vegetables: In the same skillet, add the diced onion, garlic, and red bell pepper. Sauté for about 3-4 minutes until the onion becomes translucent and the peppers are slightly softened.

        Make the Sauce: Pour in the heavy cream and chicken broth, stirring well to combine. Bring to a gentle simmer, then add the spinach and stir until wilted.

          Combine: Return the cooked turkey to the skillet and mix everything together. If the sauce is too thick, add a bit of the reserved pasta water to reach your desired consistency.

            Finish with Cheese: Gradually add the grated Parmesan cheese, stirring until it melts and incorporates into the sauce. Taste and adjust seasoning as needed.
