Creamy Cantaloupe Gazpacho

2 ripe cantaloupes, peeled, seeded, and diced

1 medium cucumber, peeled and diced

1 small red onion, finely chopped

1 medium red bell pepper, chopped

2 cups low-sodium vegetable broth

1 cup Greek yogurt (or dairy-free yogurt)

2 tablespoons fresh lime juice

1 tablespoon honey or maple syrup (optional, to taste)

1 teaspoon ground ginger

Salt and pepper to taste

Fresh mint leaves, for garnish

Olive oil, for drizzling

Prepare the Vegetables: In a blender, combine the diced cantaloupe, cucumber, red onion, and red bell pepper. Blend on high until smooth and creamy. You may need to do this in batches depending on the size of your blender.

    Add the Broth: Pour in the vegetable broth and blend again until well combined. This will help thin out the gazpacho and add depth of flavor.

      Incorporate Yogurt and Flavorings: Add the Greek yogurt, lime juice, honey (if using), and ground ginger to the blender. Blend on low until the mixture is completely smooth. Taste and season with salt and pepper as desired.
