Creamy Cauliflower Cheese Bake

1 large head of cauliflower, cut into florets

2 cups sharp cheddar cheese, grated

1 cup mozzarella cheese, grated

1 cup whole milk

1 cup heavy cream

4 tablespoons unsalted butter

1/4 cup all-purpose flour

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon mustard powder

1/4 teaspoon cayenne pepper (optional for heat)

Salt and black pepper to taste

1/2 cup breadcrumbs (for topping)

1/4 cup fresh parsley, chopped (for garnish)

Instructions
 

Preheat Oven: Preheat your oven to 350°F (175°C).

    Prepare Cauliflower: In a large pot of boiling salted water, blanch the cauliflower florets for about 3-4 minutes until just tender but still crisp. Drain and set aside.

      Make the Cheese Sauce:

        - In a medium saucepan over medium heat, melt the butter.

          - Once melted, whisk in the flour to create a roux, cooking for about 1-2 minutes.

            - Gradually whisk in the milk and heavy cream, stirring continuously to avoid lumps, and bring the mixture to a simmer.

              - Once simmering, reduce the heat and add the garlic powder, onion powder, mustard powder, cayenne pepper, salt, and black pepper. Stir until well combined.

                - Add the sharp cheddar and mozzarella cheese to the sauce and stir until completely melted and smooth.

                  Combine: In a large mixing bowl, gently combine the blanched cauliflower with the cheese sauce, ensuring all the florets are well coated.

                    Transfer to Baking Dish: Pour the cheesy cauliflower mixture into a greased baking dish, spreading it out evenly.
