Creamy Coconut Lentil Curry

1 can (14 oz) coconut milk

1 medium onion, finely chopped

3 cloves garlic, minced

1 tablespoon ginger, grated

1 tablespoon curry powder

1 teaspoon turmeric

1 teaspoon cumin

1 can (14 oz) diced tomatoes

2 cups vegetable broth

1 tablespoon vegetable oil (or coconut oil)

1 cup fresh spinach, roughly chopped

Salt and pepper, to taste

Fresh cilantro, for garnish

Lime wedges, for serving

Sauté Aromatics: In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and sauté for about 5 minutes until translucent. Stir in the garlic and ginger, cooking for an additional 2 minutes until fragrant.

    Add Spices: Sprinkle in the curry powder, turmeric, and cumin. Stir well for about 1 minute until the spices become aromatic.

      Incorporate Lentils and Liquids: Add the rinsed lentils, diced tomatoes (with their juices), coconut milk, and vegetable broth to the pot. Stir to combine everything thoroughly.

        Simmer: Bring the mixture to a gentle boil. Once boiling, reduce the heat to low. Cover and simmer for 25-30 minutes, stirring occasionally, until the lentils are tender and the curry has thickened.
