1 large cucumber, finely grated

1 cup plain Greek yogurt

1 tablespoon olive oil

1-2 cloves garlic, minced (adjust to taste)

1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)

1 tablespoon fresh mint, chopped (or 1 teaspoon dried mint)

1 tablespoon lemon juice

Salt and pepper to taste

Optional: A pinch of cayenne pepper for a little heat

Start by preparing the cucumber: wash and peel the cucumber if desired. Grate the cucumber using a box grater or a food processor. After grating, place it in a clean kitchen towel and squeeze out the excess moisture. This will prevent the dip from being watery.

    In a medium-sized bowl, combine the Greek yogurt, olive oil, minced garlic, and lemon juice. Stir well to create a creamy base.

      Add in the grated cucumber to the yogurt mixture, followed by the chopped dill and mint. Mix everything together until well combined.

        Season the dip with salt and pepper to taste. If you're seeking an extra kick, add a pinch of cayenne pepper.

          Cover the bowl and refrigerate the dip for at least 30 minutes to allow the flavors to meld together beautifully.
