12 oz pasta of your choice (fettuccine or penne work great)

1 cup pumpkin puree (canned or fresh)

1 cup heavy cream

1 cup grated Parmesan cheese

4 cloves garlic, minced

1 small onion, finely chopped

2 tablespoons olive oil

1 teaspoon ground nutmeg

½ teaspoon ground cinnamon

Salt and pepper to taste

Fresh parsley, chopped for garnish

Optional: toasted pumpkin seeds for topping

Cook the Pasta: In a large pot, bring salted water to a boil and cook the pasta according to package instructions. Once cooked, reserve 1 cup of pasta water, drain the rest, and set aside.

        Add Cheese: Gradually incorporate the grated Parmesan cheese into the sauce, stirring constantly until melted and smooth. If the sauce is too thick, add reserved pasta water, a splash at a time, until you reach your desired consistency.
