8 oz (about 2 cups) of rotini pasta

1 cup cherry tomatoes, halved

1 cucumber, diced

1 cup Kalamata olives, pitted and halved

1 cup feta cheese, crumbled

1/2 red onion, finely chopped

1 bell pepper (green, red, or yellow), diced

1/4 cup fresh parsley, chopped

1/4 cup fresh dill, chopped (or 1 tablespoon dried dill)

For the Creamy Dressing:

1/2 cup Greek yogurt

1/4 cup mayonnaise

2 tablespoons extra-virgin olive oil

1 tablespoon lemon juice

1 teaspoon garlic powder

1 teaspoon dried oregano

Salt and pepper to taste

Instructions
 

Cook the Pasta: In a large pot of boiling salted water, cook the rotini pasta according to package instructions until al dente. Drain and rinse under cold water to cool. Set aside.

    Prepare the Vegetables: While the pasta is cooling, chop the cherry tomatoes, cucumber, bell pepper, and red onion. Set aside in a large mixing bowl.

      Make the Creamy Dressing: In a separate bowl, whisk together the Greek yogurt, mayonnaise, extra-virgin olive oil, lemon juice, garlic powder, oregano, and season with salt and pepper to taste until smooth and creamy.

        Combine Ingredients: Add the cooled pasta to the bowl with the chopped vegetables. Then, fold in the Kalamata olives, crumbled feta cheese, parsley, and dill.
