4 medium zucchini, spiralized into zoodles

1 cup ricotta cheese

2 tablespoons olive oil

1 garlic clove, minced

Zest of 1 lemon

Juice of 1 lemon

1/4 cup grated Parmesan cheese

1/4 teaspoon red pepper flakes (optional)

Salt and freshly ground black pepper, to taste

Fresh basil leaves, for garnish

Prepare the Zoodles: Begin by spiralizing the zucchini into zoodles. Place them in a colander, sprinkle with a little salt, and let them sit for about 15 minutes to draw out excess moisture.

    Make the Creamy Sauce: In a mixing bowl, combine the ricotta cheese, olive oil, minced garlic, lemon zest, lemon juice, and grated Parmesan cheese. Mix well until smooth and creamy. Adjust the seasoning with salt, pepper, and red pepper flakes to your taste.

      Cook the Zoodles: Heat a large non-stick skillet over medium heat. After the zoodles have rested, gently squeeze out any excess moisture. Add the zoodles to the skillet and sauté for about 2-3 minutes, just until they're tender but still vibrant.

        Combine: Lower the heat and add the creamy ricotta mixture to the zoodles in the skillet. Toss everything together until the zoodles are well coated and heated through, about 1-2 minutes.
