1 cup elbow macaroni

2 tablespoons unsalted butter

2 tablespoons all-purpose flour

1 cup whole milk

1 cup sharp cheddar cheese, shredded

1/2 cup mozzarella cheese, shredded

1/4 teaspoon garlic powder

1/4 teaspoon onion powder

Salt and black pepper to taste

1/4 cup breadcrumbs

1 tablespoon fresh parsley, chopped (for garnish)

Instructions
 

Preheat Oven: Preheat your oven to 375°F (190°C).

    Cook Macaroni: In a large pot, bring salted water to a boil and cook the elbow macaroni according to package instructions until al dente. Drain and set aside.

      Make the Cheese Sauce: In the same pot, melt the butter over medium heat. Once melted, whisk in the flour and cook for about 1 minute until bubbling but not browned. Gradually pour in the milk while whisking continuously until the mixture is smooth. Cook until the sauce thickens, about 2-3 minutes.

        Add Cheese: Remove the pot from heat and stir in the cheddar cheese and mozzarella until melted. Add the garlic powder, onion powder, salt, and pepper.

          Combine Pasta and Sauce: Gently fold the cooked macaroni into the cheese sauce until well-coated.

            Prepare Baking Cups: Spoon the mac and cheese mixture into greased muffin tins, filling each cup about three-quarters full.

              Add Topping: Sprinkle breadcrumbs evenly over the top of each mac and cheese cup.

                Bake: Place the muffin tin in the preheated oven and bake for 20-25 minutes or until the tops are golden brown and crispy.

                  Cooling Time: Remove from the oven and let cool for about 5 minutes. Use a butter knife to gently pop the cups out of the muffin tin.

                    Garnish and Serve: Transfer the cups to a serving platter, sprinkle with chopped fresh parsley, and enjoy warm!
