1 cup wild rice blend

2 tablespoons olive oil

1 medium onion, diced

3 cloves garlic, minced

2 cups mushrooms, sliced (button, cremini, or mix)

2 medium carrots, diced

2 stalks celery, diced

6 cups vegetable broth

1 teaspoon dried thyme

1 teaspoon dried rosemary

1 teaspoon salt (adjust to taste)

½ teaspoon black pepper

1 cup heavy cream (or coconut cream for a dairy-free version)

2 tablespoons fresh parsley, chopped (for garnish)

Optional: squeeze of lemon juice for brightness

Instructions
 

Begin by rinsing the wild rice blend under cold water to remove any excess starch. Drain and set aside.

    In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced onion and sauté for about 5 minutes, or until softened and translucent.

      Stir in the minced garlic and cook for an additional minute until fragrant.

        Add the sliced mushrooms to the pot, cooking for about 6-7 minutes until they release their moisture and begin to brown.

          Incorporate the diced carrots and celery, stirring to combine, and cook for another 3-4 minutes until they soften slightly.

            Pour in the vegetable broth and add the rinsed wild rice, dried thyme, rosemary, salt, and pepper. Bring the mixture to a boil.

              Once boiling, reduce the heat to low, cover, and let simmer for about 45 minutes or until the rice is tender.

                Once the rice is cooked, stir in the heavy cream and bring the soup back to a gentle simmer. Taste and adjust seasoning if necessary. If you prefer a slightly tangy flavor, add a squeeze of lemon juice.
