8 oz (225g) pasta of your choice (fusilli or penne recommended)

1 tablespoon olive oil

2 cloves garlic, minced

1 medium zucchini, diced

1 red bell pepper, diced

1 cup cherry tomatoes, halved

1 cup spinach leaves

1 cup heavy cream (or coconut cream for a vegan option)

½ cup grated Parmesan cheese (or nutritional yeast for a vegan version)

Salt and pepper to taste

½ teaspoon dried oregano

½ teaspoon crushed red pepper flakes (optional for heat)

Fresh basil leaves for garnish

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside, reserving about ½ cup of the pasta water.

    Sauté the Veggies: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1 minute until fragrant. Then, add the diced zucchini and red bell pepper, cooking for about 3-4 minutes until they start to soften.

      Add Cherry Tomatoes & Spinach: Stir in the halved cherry tomatoes and spinach leaves. Cook for an additional 2-3 minutes until the tomatoes are soft and the spinach wilts.

        Create the Creamy Sauce: Reduce the heat to low and pour in the heavy cream. Stir to combine, and then add the grated Parmesan cheese (or nutritional yeast). Mix until the cheese melts and the sauce thickens slightly. If the sauce is too thick, add some reserved pasta water to reach your desired consistency.

          Combine Pasta and Sauce: Add the cooked pasta to the skillet with the creamy veggie sauce. Toss gently to coat the pasta evenly. Season with salt, pepper, oregano, and crushed red pepper flakes if using.

            Serve and Garnish: Once everything is well combined and heated through, remove from the heat. Plate the creamy pasta and garnish with fresh basil leaves and an extra sprinkle of cheese if desired.
