Ingredients

1 cup canned pumpkin puree (not pumpkin pie filling)

1 cup heavy cream

1/2 cup grated Parmesan cheese

2 tablespoons unsalted butter

2 cloves garlic, minced

1/2 teaspoon ground nutmeg (freshly grated if possible)

1 teaspoon dried sage or 1 tablespoon fresh sage, chopped

Salt and pepper to taste

Optional: a pinch of cayenne pepper for heat

Fresh parsley or sage for garnish (optional)

Pasta of your choice (e.g., fettuccine, penne)

Instructions

Cook the Pasta: Start by boiling a large pot of salted water. Cook your pasta according to package instructions until al dente. Reserve about 1 cup of pasta water, then drain the pasta and set it aside.

Sauté the Garlic: In a large skillet, melt the butter over medium heat. Add minced garlic and sauté for about 1 minute, until fragrant but not browned.

Add the Pumpkin: Stir in the canned pumpkin puree, mixing it with the garlic until well combined. Cook for about 2-3 minutes to heat through.

Incorporate the Cream: Pour in the heavy cream, stirring continuously to create a smooth mixture. Bring to a gentle simmer.

Season the Sauce: Add the grated Parmesan cheese, ground nutmeg, dried sage, and season with salt and pepper to taste. For an extra kick, stir in a pinch of cayenne pepper.

Combine with Pasta: Toss the cooked pasta into the creamy pumpkin sauce, mixing until the pasta is evenly coated. If the sauce is too thick, gradually add reserved pasta water until your desired consistency is reached.

Serve: Plate the pasta and garnish with fresh parsley or sage if desired. Enjoy your creamy pumpkin Alfredo sauce warm!
