1 cup fresh ricotta cheese

2 cups fresh spinach, roughly chopped

1 tablespoon olive oil

1 clove garlic, minced

1 tablespoon lemon juice

Salt and pepper, to taste

4 slices of crusty bread (like ciabatta or sourdough)

1/4 cup grated Parmesan cheese

1/4 teaspoon red pepper flakes (optional)

Fresh basil or chives, for garnish

Sauté the Spinach: In a medium skillet over medium heat, heat the olive oil. Add the minced garlic and sauté for about 1 minute until fragrant. Add the chopped spinach, salt, and pepper. Cook for about 3-4 minutes, stirring occasionally, until wilted. Remove from heat and let cool slightly.

    Prepare the Ricotta Mixture: In a mixing bowl, combine the ricotta cheese, lemon juice, cooked spinach, and grated Parmesan cheese. Stir until well mixed. Adjust salt and pepper to your taste. If you prefer a little heat, add the red pepper flakes at this stage.
