Creamy Roasted Cauliflower Dip

1 medium head of cauliflower, cut into florets

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon smoked paprika

Salt and pepper, to taste

1 cup cream cheese, softened

½ cup sour cream or Greek yogurt

½ cup grated Parmesan cheese

2 tablespoons fresh lemon juice

1 tablespoon fresh chives, chopped (for garnish)

Optional: fresh veggie sticks and crackers for serving

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Prepare Cauliflower: In a large bowl, toss the cauliflower florets with olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper until evenly coated.

      Roast Cauliflower: Spread the seasoned cauliflower on a baking sheet in an even layer. Roast in the preheated oven for 25-30 minutes, turning halfway, until golden and tender. Remove from the oven and let cool slightly.

        Blend the Dip: In a food processor, combine the roasted cauliflower, cream cheese, sour cream (or Greek yogurt), Parmesan cheese, and lemon juice. Blend until smooth and creamy. You may need to scrape down the sides to ensure everything is well combined.

          Taste and Adjust Seasoning: Taste the dip and add more salt, pepper, or lemon juice as desired to enhance the flavor.

            Serve: Transfer the dip to a serving bowl and garnish with chopped chives. Serve warm or at room temperature with fresh vegetable sticks and crackers for dipping.
