Creamy Roasted Garlic Cheddar Cauliflower Soup Recipe

1 head of cauliflower, chopped into florets

6-8 cloves of garlic, unpeeled

2 tablespoons olive oil

Salt and pepper to taste

1 medium onion, diced

4 cups vegetable broth or chicken broth

1 cup heavy cream

2 cups sharp cheddar cheese, grated

1 teaspoon dried thyme (optional)

Fresh chives or parsley for garnish

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Roast the Garlic: Place the unpeeled garlic cloves onto a small piece of foil, drizzle with a little olive oil, and sprinkle with salt. Wrap it up in the foil and place it in the oven. Roast for about 30-35 minutes, or until the garlic is soft and fragrant.

      Prepare the Cauliflower: On a large baking sheet, toss the cauliflower florets with olive oil, salt, and pepper. Spread them out in a single layer. Roast in the oven for about 20-25 minutes, or until they are tender and slightly browned.

        Sauté the Onion: In a large pot, heat a tablespoon of olive oil over medium heat. Add the diced onion and sauté for 5-7 minutes, until translucent and soft.

          Combine Ingredients: Once the garlic is roasted, let it cool slightly, then squeeze the garlic out of the skins into the pot with the onions. Add the roasted cauliflower, broth, and thyme (if using). Bring to a simmer and cook for about 10 minutes.

            Blend the Soup: Using an immersion blender, blend the soup until smooth and creamy. If you don’t have an immersion blender, carefully transfer the mixture in batches to a standard blender.

              Add Cream and Cheese: Reduce the heat to low, then stir in the heavy cream and grated cheddar cheese. Continue stirring until the cheese is melted and incorporated. Taste and adjust seasoning with additional salt and pepper if necessary.
