Ingredients
  

1 whole bulb of garlic

1 cup cream cheese, softened

1/4 cup sour cream

2 tablespoons olive oil

1 tablespoon fresh lemon juice

1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)

1/2 teaspoon salt (to taste)

1/4 teaspoon black pepper (to taste)

1 tablespoon fresh chives, chopped (for garnish)

Instructions
 

Roast the Garlic:

    Preheat your oven to 400°F (200°C). Slice off the top of the garlic bulb to expose the cloves. Drizzle with a teaspoon of olive oil and wrap it in aluminum foil. Place in the oven and roast for 30-35 minutes, until the cloves are soft and golden. Let it cool slightly.

      Prepare the Spread:

        In a medium mixing bowl, combine the softened cream cheese, sour cream, and the remaining olive oil. Using a fork or a hand mixer, blend together until smooth and creamy.

          Add Roasted Garlic:

            Squeeze the roasted garlic cloves from their skins into the mixing bowl. Add the fresh lemon juice, thyme, salt, and pepper, and mix well until all ingredients are thoroughly combined.

              Taste and Adjust:

                Taste the spread and adjust the seasoning if necessary. It should be creamy, with a rich roasted garlic flavor.

                  Chill:

                    Transfer the creamy roasted garlic spread to a serving bowl. Cover and refrigerate for at least 30 minutes to allow the flavors to meld.

                      Serve:

                        Just before serving, sprinkle chopped chives on top for garnish. Serve with crusty bread, crackers, or vegetable sticks.
