Ingredients

8 oz (225g) pasta of choice (fettuccine or penne work well)

1 cup fresh spinach, chopped

1 cup canned artichoke hearts, drained and chopped

1 cup cream cheese, softened

1 cup grated Parmesan cheese

1 cup heavy cream

2 cloves garlic, minced

1 tablespoon olive oil

1/2 teaspoon red pepper flakes (optional)

Salt and pepper to taste

Fresh basil or parsley for garnish (optional)

Instructions

Cook the Pasta: In a large pot of salted boiling water, cook the pasta according to package instructions until al dente. Drain and set aside, reserving 1 cup of pasta water for later.

Sauté the Garlic: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1-2 minutes until fragrant, being careful not to burn it.

Prepare the Creamy Sauce: Lower the heat to medium-low and add the cream cheese into the skillet with the garlic. Stir until it's melted and combined. Gradually pour in the heavy cream, mixing until smooth.

Add the Cheeses: Stir in the grated Parmesan cheese until melted and the sauce is creamy. If the sauce is too thick, add some reserved pasta water until you reach your desired consistency.

Incorporate Spinach and Artichokes: Add the chopped spinach and artichoke hearts to the sauce. Mix well and let everything cook together for about 3-4 minutes until the spinach wilts.

Combine Pasta and Sauce: Add the cooked pasta to the skillet, tossing it in the creamy sauce until it's well coated. Season with salt, pepper, and red pepper flakes if you want a little heat.

Serve: Plate the creamy spinach artichoke pasta, garnishing with fresh basil or parsley if desired. Enjoy immediately!
