8 oz (225g) pasta of choice (fusilli or penne recommended)

2 cups fresh spinach, chopped

1 cup feta cheese, crumbled

1 cup heavy cream

2 cloves garlic, minced

1 tablespoon olive oil

1 teaspoon lemon juice

Salt and pepper to taste

¼ teaspoon red pepper flakes (optional for a spicy kick)

Fresh basil or parsley for garnish

Cook the Pasta: In a large pot of salted boiling water, cook the pasta according to package instructions until al dente. Drain and reserve some pasta water.

    Sauté Garlic: While the pasta is cooking, heat olive oil in a skillet over medium heat. Add minced garlic and sauté for about 1-2 minutes until fragrant, being careful not to burn it.

      Add Spinach: Add the chopped spinach to the skillet and sauté until wilted, about 3-4 minutes.

        Create Cream Sauce: Pour in the heavy cream and stir to combine. Let it simmer on low heat for 3-4 minutes, allowing it to thicken slightly.

          Incorporate Feta: Add the crumbled feta cheese and lemon juice to the cream sauce, stirring until the cheese melts and creates a creamy consistency. If the sauce is too thick, add a little reserved pasta water to reach desired creaminess.
