Creamy Sweet Corn Chowder

4 cups fresh or frozen sweet corn kernels

1 medium onion, diced

2 cloves garlic, minced

2 medium potatoes, peeled and diced

1 red bell pepper, diced

4 cups vegetable broth

1 cup heavy cream (or coconut milk for a vegan option)

2 tablespoons butter (or olive oil)

1 teaspoon smoked paprika

Salt and pepper to taste

Fresh chives or parsley for garnish

Instructions
 

In a large pot, melt the butter over medium heat. Add the diced onion and cook until translucent, about 5 minutes. Stir in the minced garlic and diced red bell pepper, cooking for an additional 2 minutes until fragrant.

    Add the diced potatoes and the sweet corn kernels to the pot. Stir well to combine all ingredients.

      Pour in the vegetable broth and add the smoked paprika. Bring the mixture to a boil, then reduce the heat and let it simmer for about 15-20 minutes or until the potatoes are tender.

        Once the potatoes are cooked, use an immersion blender to blend the chowder until smooth, leaving some chunks for texture. (If using a regular blender, be sure to let the mixture cool a bit before blending in batches.)

          Stir in the heavy cream (or coconut milk) and season with salt and pepper to taste. Heat through for an additional 5 minutes, allowing the flavors to meld together.

            Serve hot, garnished with chopped chives or parsley for a pop of color and freshness.
