1 cup mini marshmallows (optional)

    Cook the Sweet Potatoes: In a large pot, bring water to a boil and add the cubed sweet potatoes. Cook for about 15-20 minutes, or until fork-tender. Drain and let them cool slightly.

      Mash the Sweet Potatoes: Transfer the cooked sweet potatoes to a large mixing bowl. Add the almond milk, maple syrup, melted coconut oil, vanilla extract, cinnamon, nutmeg, and sea salt.
