Ingredients

8 oz elbow macaroni or your favorite pasta

1 lb ground turkey

1 small onion, diced

2 cloves garlic, minced

1 packet taco seasoning (1 oz)

1 can (14.5 oz) diced tomatoes with green chilies, drained

1 can (15 oz) kidney beans, drained and rinsed

1 cup corn kernels (fresh, frozen, or canned)

1 cup cream cheese, softened

1 cup chicken broth

1 cup shredded cheddar cheese

1 cup milk

2 tablespoons olive oil

Salt and pepper to taste

Fresh cilantro, chopped (for garnish)

Sliced jalapeños or diced avocado (optional for topping)

Instructions

Cook the Pasta: Begin by boiling a large pot of salted water. Add the elbow macaroni and cook according to package instructions until al dente. Drain and set aside.

Sauté the Turkey: In a large skillet, heat the olive oil over medium heat. Add the diced onion and cook for 2-3 minutes until translucent. Add the minced garlic and sauté for another minute. Then, add the ground turkey and cook until browned, breaking it apart with a spoon, about 5-7 minutes.

Add Seasonings: Once the turkey is browned, sprinkle in the taco seasoning, stirring to coat the turkey evenly. Next, add the drained diced tomatoes, kidney beans, and corn to the skillet, mixing well.

Create the Sauce: Lower the heat and add the cream cheese, chicken broth, and milk, stirring until the cream cheese is fully melted and the sauce is creamy. Allow the mixture to simmer for 5 minutes, letting the flavors meld together.

Combine Pasta and Sauce: Add the cooked pasta into the skillet and gently mix, ensuring every piece of pasta is coated with the creamy taco sauce.

Melt the Cheese: Sprinkle the shredded cheddar cheese over the pasta and cover the skillet for a few minutes until the cheese melts and everything is piping hot.

Final Touches: Season with salt and pepper to taste. Once everything is well combined and heated to your liking, remove from heat.

Serve: Garnish the Creamy Taco Pasta with freshly chopped cilantro. If desired, top with sliced jalapeños or diced avocado for an extra kick!
