2 tablespoons olive oil

1 medium onion, diced

3 cloves garlic, minced

1 can (28 oz) crushed tomatoes

2 cups vegetable or chicken broth

1 tablespoon sugar (optional)

1 teaspoon dried oregano

1 teaspoon dried basil

Salt and pepper to taste

1 cup heavy cream

1/4 cup fresh basil leaves, chopped (plus more for garnish)

1 tablespoon balsamic vinegar (optional)

For the Grilled Cheese Dippers:

8 slices of your favorite bread (sourdough or whole grain)

8 slices of cheddar cheese (or your preferred melting cheese)

4 tablespoons butter, softened

1 teaspoon garlic powder (optional)

Pinch of salt

Sauté the Aromatics: In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes. Add the minced garlic and cook for another 1-2 minutes until fragrant.

    Add Tomatoes and Broth: Stir in the crushed tomatoes, vegetable or chicken broth, sugar (if using), dried oregano, and dried basil. Season with salt and pepper. Bring to a simmer, then reduce the heat and let it cook for about 15-20 minutes, allowing the flavors to meld together.

      Blend the Soup: After simmering, remove the pot from the heat. Use an immersion blender to puree the soup until smooth. Alternatively, carefully transfer it to a countertop blender in batches, then return it to the pot.

        Make it Creamy: Stir in the heavy cream and fresh basil leaves. If desired, add balsamic vinegar for a hint of sweetness and acidity. Adjust seasoning if necessary. Heat the soup gently until warmed through.
