Creamy Tuscan White Bean Pasta

8 oz (225g) whole grain pasta (e.g., penne or fusilli)

1 can (15 oz) white beans (cannellini or great northern), drained and rinsed

2 tbsp olive oil

4 cloves garlic, minced

1 medium onion, diced

1 cup cherry tomatoes, halved

1 cup fresh spinach leaves

1 cup vegetable broth

¾ cup heavy cream or coconut cream for a vegan option

1 tsp dried Italian herbs (oregano, thyme, basil)

Salt and pepper to taste

Fresh basil leaves for garnish

Grated Parmesan cheese or nutritional yeast for serving (optional)

Instructions
 

Cook the Pasta: In a large pot of boiling salted water, cook the pasta according to package instructions until al dente. Drain and set aside, reserving about 1 cup of pasta cooking water.

    Sauté the Aromatics: In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until translucent. Stir in the garlic and cook for another minute until fragrant.

      Add Vegetables: Add the halved cherry tomatoes to the skillet and cook for about 5 minutes, until they're softened. Follow this by adding the fresh spinach, and cook until wilted, about 2 minutes.

        Combine Beans and Broth: Stir in the white beans, vegetable broth, and dried Italian herbs. Allow the mixture to simmer for about 5 minutes, letting the flavors meld.

          Make it Creamy: Pour in the heavy cream (or coconut cream) and stir to combine. Season with salt and pepper to taste. If the sauce appears too thick, add some reserved pasta water until you reach desired consistency.

            Mix in the Pasta: Add the cooked pasta to the creamy sauce and toss everything together until well-coated. Cook for an additional 2-3 minutes on low heat, allowing the pasta to absorb some of the sauce.
