2 medium carrots, diced

2 celery stalks, diced

1 teaspoon dried thyme

6 cups vegetable broth

2 cans (15 oz each) white beans (cannellini or great northern), drained and rinsed

4 cups chopped kale (stems removed)

1 cup coconut milk (can substitute with heavy cream for a richer flavor)

Salt and pepper to taste

Fresh lemon juice (optional, for garnish)
