2 tablespoons olive oil

1 medium onion, chopped

3 cloves garlic, minced

4 cups vegetable broth

2 (15-ounce) cans white beans (such as cannellini or great northern), drained and rinsed

4 cups fresh spinach, packed

1 cup coconut milk

1 teaspoon dried thyme

1 teaspoon smoked paprika

Salt and pepper to taste

Juice of 1 lemon

Fresh parsley, for garnish

Sauté the Aromatics: In a large pot, heat the olive oil over medium heat. Add the chopped onion and cook until translucent, about 5-7 minutes. Stir in the minced garlic and cook for an additional 1-2 minutes, until fragrant.
