4 medium zucchinis (about 1.5 lbs), spiralized into noodles

1 cup raw cashews (soaked in water for at least 2 hours)

1 clove garlic, minced

1 cup unsweetened almond milk (or any plant-based milk)

2 tablespoons nutritional yeast

1 tablespoon lemon juice

1 teaspoon onion powder

1/2 teaspoon salt (adjust to taste)

1/4 teaspoon black pepper

1 tablespoon olive oil

Fresh basil leaves, for garnish

Optional: Grated vegan parmesan cheese for topping

Prepare the Cashew Cream: Drain the soaked cashews and add them to a blender along with the minced garlic, almond milk, nutritional yeast, lemon juice, onion powder, salt, and black pepper. Blend on high until smooth and creamy, scraping down the sides as needed. This will be your Alfredo sauce.
