Ingredients
  

2 ripe avocados

1 cup panko breadcrumbs

½ cup all-purpose flour

2 large eggs

1 teaspoon garlic powder

1 teaspoon smoked paprika

½ teaspoon cayenne pepper (optional for heat)

Salt and pepper to taste

Cooking spray or olive oil for spraying

Optional dipping sauce: Spicy mayo or ranch dressing

Instructions
 

Prepare the Avocados: Cut the avocados in half, remove the pit, and carefully scoop out the flesh. Slice each half into wedges or thick slices.

    Set Up the Breading Station: In three separate shallow bowls, prepare the breading station:

      - In the first bowl, place the all-purpose flour seasoned with salt and pepper.

        - In the second bowl, crack the eggs and whisk until well combined.

          - In the third bowl, combine panko breadcrumbs, garlic powder, smoked paprika, and cayenne pepper. Mix well.

            Bread the Avocado Wedges:

              - Coat each avocado piece in the flour to lightly dust it, shaking off any excess.

                - Dip the floured piece into the egg mixture, ensuring it's completely covered.

                  - Finally, roll the avocado in the panko mixture, pressing gently to ensure the breadcrumbs stick.

                    Preheat the Air Fryer: Set your air fryer to 375°F (190°C) and preheat for approximately 3-5 minutes.

                      Air Fry the Avocado Bites:

                        - Lightly spray or brush the air fryer basket with cooking spray or olive oil to prevent sticking.

                          - Place the breaded avocado bites in a single layer in the air fryer basket, ensuring they don’t touch each other for even cooking.

                            - Spray the tops lightly with more cooking spray or olive oil.

                              Cooking Time: Air fry the avocado bites for 8-10 minutes, flipping them halfway through, or until golden brown and crispy.

                                Serve: Once done, remove the crispy avocado bites and let them cool for a few minutes. Serve with your choice of dipping sauce like spicy mayo or ranch dressing.
