4 medium-sized russet potatoes, peeled and cut into 1-inch cubes

2 tablespoons fresh parsley, chopped (for garnish)

Prep the Potatoes: Start by peeling the russet potatoes and cutting them into 1-inch cubes. Rinse the cubed potatoes under cold water to remove excess starch, then drain and pat them dry with a clean kitchen towel or paper towel.
