Ingredients

2 medium zucchinis

1 cup panko breadcrumbs

½ cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

1 large egg

1 tablespoon olive oil

Cooking spray (for the air fryer)

Instructions

Prepare the Zucchini: Wash and dry the zucchinis. Cut each zucchini in half lengthwise, then slice each half into wedges or fries, about 1/2 inch thick.

Set Up a Breading Station: In a shallow bowl, whisk the egg with the olive oil until well combined. In another bowl, mix the panko breadcrumbs, grated Parmesan, garlic powder, onion powder, paprika, salt, and black pepper.

Coat the Zucchini Fries: Dip each zucchini piece first into the egg mixture, allowing excess to drip off, and then coat it thoroughly with the panko mixture. Place the coated fries on a plate or tray.

Preheat the Air Fryer: Preheat your air fryer to 400°F (200°C) for about 5 minutes. This will ensure that the zucchini fries get crispy.

Air Fry the Zucchini: Lightly spray the air fryer basket with cooking spray. Place the zucchini fries in a single layer in the basket, ensuring they are not overcrowded for even cooking. You might need to do this in batches depending on the size of your air fryer.

Cooking Time: Air fry the zucchini fries for about 10-12 minutes, flipping them halfway through. Cook until they are golden brown and crispy.

Serve and Enjoy: Once cooked, carefully remove the zucchini fries from the air fryer and allow them to cool slightly before serving. Enjoy them with your favorite dipping sauce, like marinara or a creamy ranch!
