Crispy Baked Avocado Fries

2 ripe avocados

1 cup panko breadcrumbs

1/2 cup all-purpose flour

2 large eggs

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

1/2 teaspoon cayenne pepper (optional, for heat)

Salt and pepper to taste

Cooking spray or olive oil for drizzling

Fresh lime wedges (for serving)

Instructions
 

Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

    Slice each avocado in half, remove the pit, and carefully scoop the flesh out while keeping the shape intact. Cut the avocado halves into wedges (about 6 slices per half).

      In a shallow bowl, add the all-purpose flour and season with salt and pepper.

        In another bowl, beat the eggs until well combined.

          In a third bowl, combine the panko breadcrumbs, garlic powder, onion powder, paprika, cayenne pepper (if using), and a pinch of salt. Mix thoroughly.

            Take each avocado wedge and first coat it in the flour, shaking off any excess.

              Dip the floured wedge into the beaten eggs, making sure it is fully coated.

                Lastly, roll the egg-coated avocado in the panko mixture, pressing gently to ensure the breadcrumbs adhere well.

                  Place the coated avocado fries on the prepared baking sheet, making sure they are spaced apart.

                    Lightly spray or drizzle olive oil over the fries to promote crispy baking.

                      Bake the avocado fries for 20-25 minutes, flipping them halfway through, until they are golden brown and crispy.

                        Serve warm with fresh lime wedges on the side for squeezing over the fries. Enjoy with dipping sauces like sriracha mayo or ranch dressing!
