Crispy Baked Fish Nuggets

1 lb white fish fillets (cod, haddock, or tilapia), cut into bite-sized pieces

1 cup buttermilk

1 cup panko breadcrumbs

1/2 cup all-purpose flour

2 tsp garlic powder

1 tsp onion powder

1 tsp smoked paprika

1/2 tsp cayenne pepper (adjust to taste)

Salt and pepper, to taste

2 tbsp fresh parsley, chopped (for garnish)

Cooking spray or olive oil for misting

Instructions
 

Marinate the Fish: Place the bite-sized fish pieces in a bowl and pour buttermilk over them. Ensure all pieces are coated. Cover and refrigerate for at least 30 minutes (or up to 2 hours) to tenderize the fish and allow it to soak in the flavors.

    Preheat the Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper and lightly spray it with cooking spray or drizzle a little olive oil to prevent sticking.

      Prepare the Breading Station: In a shallow dish, combine panko breadcrumbs, garlic powder, onion powder, smoked paprika, cayenne pepper, salt, and pepper. Mix well to ensure the seasonings are evenly distributed. In another shallow dish, add the all-purpose flour.

        Bread the Fish Nuggets: Remove the fish pieces from buttermilk, allowing any excess to drip off. Dredge each piece in flour, shaking off the excess, then dip into the panko mixture, pressing it lightly to coat thoroughly. Place the coated nuggets on the prepared baking sheet.

          Bake the Nuggets: Lightly mist the coated fish nuggets with cooking spray or drizzle with a bit of olive oil to help them crisp up in the oven. Bake in the preheated oven for about 15-20 minutes, flipping halfway through, until the fish nuggets are golden brown and the internal temperature reaches 145°F (63°C).
