Crispy Baked Taco Bowls

4 large flour tortillas

1 cup shredded cheddar cheese

1 cup cooked ground beef (or shredded chicken)

1 can (15 oz) black beans, drained and rinsed

1 cup corn kernels (fresh, frozen, or canned)

1 cup diced tomatoes

½ cup diced red onion

1 avocado, cubed

1 cup shredded lettuce

½ cup sour cream

½ cup salsa

1 teaspoon taco seasoning

Olive oil for brushing

Fresh cilantro, for garnish

Lime wedges for serving

Salt and pepper to taste

Instructions
 

Preheat the Oven: Start by preheating your oven to 375°F (190°C).

    Prepare the Tortilla Bowls:

      - Lightly brush both sides of each flour tortilla with olive oil.

        - Carefully fit each tortilla into a large muffin tin (or an oven-safe bowl) to form a bowl shape. You can create 4 bowls at once.

          Add Cheese: Sprinkle about ¼ cup of shredded cheddar cheese in the bottom of each tortilla bowl. This will help create a barrier against sogginess.

            Layer the Fillings:

              - In a mixing bowl, combine the cooked ground beef (or chicken), black beans, corn, diced tomatoes, red onion, and taco seasoning. Season with salt and pepper to taste.

                - Spoon this mixture evenly into each tortilla bowl, filling them generously.

                  Add Extra Cheese: Top each filled tortilla bowl with the remaining shredded cheddar cheese.

                    Bake the Bowls: Place the muffin tin in the preheated oven and bake for 15-20 minutes, or until the tortillas are crispy and golden, and the cheese is melted and bubbly.

                      Prepare Toppings: While the bowls are baking, prepare your toppings—slice the avocado, chop the lettuce, and get your sour cream and salsa ready.

                        Assemble and Serve:

                          - Once the taco bowls are done baking, remove them from the oven and let them cool slightly.

                            - Fill each bowl with layers of shredded lettuce, diced avocado, and top with a dollop of sour cream and a spoonful of salsa.

                              - Garnish with fresh cilantro and serve with lime wedges on the side for that extra zing.
