1 lb (450g) boneless, skinless chicken breasts, cut into bite-sized pieces

1 cup all-purpose flour

2 large eggs

1 cup panko breadcrumbs

1/2 cup grated Parmesan cheese

1 tsp garlic powder

1 tsp Italian seasoning

1/2 tsp salt

1/4 tsp black pepper

1 cup marinara sauce (for dipping)

Fresh basil leaves (for garnish)

Olive oil spray (for cooking)

Prepare Chicken: Start by seasoning the bite-sized chicken pieces with salt and pepper. This will help infuse flavor into the chicken.

    Set Up Breading Station: In three separate shallow bowls, set up your breading station:

      - In the first bowl, place the flour.

        - In the second bowl, whisk the two eggs until well combined.

          - In the third bowl, mix the panko breadcrumbs, grated Parmesan cheese, garlic powder, and Italian seasoning.

            Bread the Chicken:

              - Dredge each piece of chicken first in the flour, shaking off any excess.

                - Dip it next in the egg mixture, ensuring it's well coated.

                  - Finally, press the chicken pieces into the panko mixture, coating them evenly and firmly pressing to ensure the crumbs adhere well. Repeat this for all the chicken pieces.

                    Preheat the Air Fryer: If you're using an air fryer, preheat it to 400°F (200°C).

                      Cook the Chicken: Arrange the breaded chicken bites in a single layer in the air fryer basket. Lightly spray them with olive oil to promote crispiness. Cook for about 10-12 minutes, flipping halfway through, until golden brown and crispy.

                        Prepare Marinara: While the chicken is cooking, heat the marinara sauce in a small saucepan over low heat, stirring occasionally. You can also add some fresh basil for extra flavor.
