Crispy Chicken Quesadilla Wedges

2 cups cooked, shredded chicken (can use rotisserie chicken)

1 cup shredded cheddar cheese

1 cup shredded Monterey Jack cheese

1/2 cup diced bell peppers (any color)

1/4 cup diced red onion

1/4 cup sour cream

1 tsp garlic powder

1 tsp onion powder

1/2 tsp smoked paprika

1/2 tsp cumin

Salt and pepper, to taste

4 large flour tortillas

2 tbsp olive oil (for frying)

Fresh cilantro, chopped (for garnish)

Salsa (for serving)

Instructions
 

In a large mixing bowl, combine the shredded chicken, cheddar cheese, Monterey Jack cheese, bell peppers, red onion, sour cream, garlic powder, onion powder, smoked paprika, cumin, salt, and pepper. Mix until well combined.

    Heat a large skillet over medium heat. Add 1 tablespoon of olive oil and allow it to heat.

      Place a tortilla in the skillet. Spoon a generous portion of the chicken and cheese mixture onto one half of the tortilla, spreading it evenly but leaving some space at the edges.

        Fold the tortilla in half to create a half-moon shape. Press down gently with a spatula to ensure it holds together. Cook for about 3-4 minutes, or until the bottom is golden brown and crispy.

          Carefully flip the quesadilla and cook for another 3-4 minutes on the other side. Remove from the skillet and let it cool slightly on a cutting board before cutting into wedges.

            Repeat the process with the remaining tortillas and filling, adding more olive oil to the skillet as needed.

              Serve the crispy chicken quesadilla wedges hot, garnished with fresh cilantro and with salsa on the side for dipping.
