Crispy Chicken Taco Quesadillas

2 cups cooked chicken, shredded (grilled or rotisserie works well)

1 cup taco seasoning (store-bought or homemade)

1 cup shredded Mexican cheese blend (cheddar, Monterey Jack, etc.)

½ cup diced tomatoes

½ cup black beans, rinsed and drained

1 small red onion, finely chopped

1 small bell pepper, diced (any color)

2 tablespoons olive oil

4 large flour tortillas

1 cup sour cream (for serving)

½ cup fresh cilantro, chopped (for garnish)

1 tablespoon lime juice

Salt and pepper to taste

Instructions
 

Prepare the Chicken Filling: In a bowl, combine the shredded chicken with the taco seasoning, diced tomatoes, black beans, red onion, bell pepper, and lime juice. Mix well and season with salt and pepper to taste.

    Heat the Tortillas: In a large non-stick skillet, heat the olive oil over medium heat. Place one tortilla in the skillet, and let it warm for about 30 seconds.

      Add Filling and Cheese: On one half of the warmed tortilla, add a generous amount of the chicken filling, then sprinkle about ¼ cup of the shredded cheese on top.

        Fold and Grill: Carefully fold the tortilla in half, covering the filling. Cook for about 3-4 minutes on one side until golden and crispy. Use a spatula to flip it over and cook for another 3-4 minutes on the other side, until the cheese is melted and the tortilla is crispy.

          Repeat for Remaining Quesadillas: Remove the cooked quesadilla from the skillet and place it on a cutting board. Cut it into wedges. Repeat the process for the remaining tortillas and filling.

            Serve: Serve the crispy chicken taco quesadillas hot with a dollop of sour cream and garnish with fresh cilantro.
