Ingredients

4 medium-sized Yukon Gold potatoes, peeled and cut into 1-inch cubes

4 tablespoons unsalted butter

4 cloves garlic, minced

1 teaspoon fresh rosemary, finely chopped (or ½ teaspoon dried)

1 teaspoon fresh thyme leaves (or ½ teaspoon dried)

1 teaspoon paprika (smoked or sweet, based on preference)

½ teaspoon black pepper

½ teaspoon sea salt (more to taste)

Fresh parsley, chopped (for garnish)

Instructions

Preheat the Oven: Preheat your oven to 425°F (220°C) and line a large baking sheet with parchment paper for easy cleanup.

Prepare the Potatoes: In a large pot, add the potato cubes and cover with cold water. Bring to a boil over medium-high heat. Once boiling, add a pinch of salt and cook for about 5-7 minutes until the potatoes are just fork-tender but not fully cooked. Drain well and let them sit for a few minutes to steam off excess moisture.

Make the Garlic Butter: In a small saucepan over low heat, melt the butter. Once melted, add the minced garlic and sauté for 2-3 minutes until fragrant but not browned. Stir in the rosemary, thyme, paprika, black pepper, and salt. Remove from heat.

Coat the Potatoes: In a large mixing bowl, add the cooked potato cubes. Pour the garlic butter mixture over the potatoes and toss gently to coat the cubes evenly.

Arrange on Baking Sheet: Spread the coated potato cubes evenly on the prepared baking sheet in a single layer. Make sure there’s space between each cube for optimal crispiness.

Bake: Place the baking sheet in the preheated oven and bake for 25-30 minutes, flipping the potatoes halfway through, until they are golden brown and crispy on the outside.

Serve: Once done, remove from the oven and let them cool for a couple of minutes. Sprinkle with freshly chopped parsley for a burst of color and flavor. Enjoy your delicious Crispy Garlic Butter Potato Cubes!
