Ingredients

2 medium zucchinis

1 cup grated Parmesan cheese

1 cup breadcrumbs (preferably panko for extra crunch)

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon black pepper

1/2 teaspoon salt

1 teaspoon Italian seasoning (optional)

2 eggs, beaten

Cooking spray or olive oil for drizzling

Instructions

Preheat the Oven: Preheat your oven to 425°F (220°C). Prepare a baking sheet by lining it with parchment paper or lightly greasing it with cooking spray.

Prepare the Zucchini: Wash and dry the zucchinis. Cut off the ends, then slice them into thin rounds (about 1/4 inch thick). Aim for uniform thickness to ensure even cooking.

Set Up Breading Station: In a shallow bowl, combine the grated Parmesan cheese, breadcrumbs, garlic powder, onion powder, black pepper, salt, and Italian seasoning. In another bowl, beat the two eggs until well combined.

Coat Zucchini Chips: Dip each zucchini slice into the beaten egg, allowing excess to drip off. Next, dip the slice into the breadcrumb mixture, ensuring it's fully coated. Place the breaded zucchini chips on the prepared baking sheet in a single layer.

Spray for Crispiness: Lightly spray the coated zucchini chips with cooking spray or drizzle a bit of olive oil over them to help achieve that crispy texture.

Bake: Bake in the preheated oven for 20-25 minutes, or until golden brown and crispy, flipping the chips halfway through to ensure even crisping. Keep an eye on them to prevent burning.

Cool and Serve: Once done, remove from the oven and let cool for a few minutes on the baking sheet. Serve warm as a snack or appetizer, with your favorite dipping sauce such as marinara or ranch.
