Ingredients

2 large sweet potatoes

3 tablespoons olive oil

1 teaspoon paprika

1 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon salt (to taste)

1/4 teaspoon freshly cracked black pepper

1/4 teaspoon cayenne pepper (optional, for heat)

Fresh herbs (such as rosemary or thyme) for garnish

Instructions

Preheat the Oven: Start by preheating your oven to 425°F (220°C). Line a baking sheet with parchment paper for easy cleanup.

Prepare Sweet Potatoes: Wash and peel the sweet potatoes. Slice them into 1/4-inch thick rounds, aiming for uniformity to ensure even cooking.

Seasoning Mixture: In a large mixing bowl, combine the olive oil, paprika, garlic powder, onion powder, salt, black pepper, and cayenne pepper (if using). Stir until well mixed.

Coat Sweet Potato Rounds: Add the sliced sweet potatoes to the bowl and toss well to coat each round evenly with the seasoning mixture.

Arrange on Baking Sheet: Spread the sweet potato rounds in a single layer on the prepared baking sheet, ensuring they are not overcrowded to allow for crispiness.

Roasting: Place the baking sheet in the preheated oven and roast for 20 minutes. After 20 minutes, carefully flip each round and roast for an additional 15-20 minutes or until the edges are golden brown and crispy.

Garnish and Serve: Once cooked, remove from the oven and let cool for a few minutes. Garnish with freshly chopped herbs for an added touch of color and flavor.

Enjoy: Serve warm as a side dish or a snack with your favorite dipping sauce!
