Crispy Shrimp Balls with Sweet Chili Sauce

For the Shrimp Balls:

1 lb (450g) raw shrimp, peeled and deveined

1/2 cup (65g) breadcrumbs, plus extra for coating

1/4 cup (40g) grated Parmesan cheese

2 cloves garlic, minced

1 green onion, finely chopped

1 tsp ginger, grated

1 egg, lightly beaten

1 tsp sesame oil

1 tsp salt

1/2 tsp black pepper

1/2 tsp red pepper flakes (optional for heat)

Vegetable oil, for frying

For the Sweet Chili Sauce:

1/2 cup (120ml) sweet chili sauce

1 tablespoon rice vinegar

1 teaspoon soy sauce

1 teaspoon lime juice

1 clove garlic, minced

1 tsp sesame seeds (for garnish)

Fresh cilantro, chopped (for garnish)

Instructions
 

Prep the Shrimp: In a food processor, combine the peeled and deveined shrimp. Pulse until the shrimp are finely chopped but not pureed—aim for a coarse consistency.

    Combine Ingredients: In a large mixing bowl, add the chopped shrimp, breadcrumbs, Parmesan cheese, minced garlic, chopped green onion, grated ginger, beaten egg, sesame oil, salt, black pepper, and red pepper flakes. Mix until everything is well combined.

      Shape the Balls: Using your hands, take a small amount of the mixture and shape it into balls, roughly 1 to 1.5 inches in diameter. Roll each ball lightly in additional breadcrumbs for an extra crispy coating.

        Heat the Oil: In a deep frying pan or pot, heat vegetable oil over medium-high heat. You’ll need enough oil to submerge the shrimp balls.

          Fry the Balls: Once the oil is hot (around 350°F / 175°C), carefully add the shrimp balls in batches, ensuring not to overcrowd the pan. Fry for about 3-4 minutes on each side, or until they are golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

            Make the Sauce: In a small bowl, whisk together the sweet chili sauce, rice vinegar, soy sauce, lime juice, and minced garlic until well combined. Set aside.
